
Ingredients:
• 4 – large fish fillets
• 1.5 tbsp – melted Butter
• 1 cup – flour
• 1 tbsp – chopped Coriander leaves
• 1 tsp – chilli powder
• salt and pepper to taste
• oil for frying
• 2 – eggs (separated)
• For serving:
• wedge of Lime
• tartar sauce
Method:
- Put the flour, egg yolks, chilli powder, salt, pepper, cheese and butter in a bowl.
- Cover and refrigerate for about 3 hours.
- Beat the egg whites till stiff.
- Add to the batter along with the coriander leaves.
- Coat the fish fillets generously with the batter.
- Deep fry in hot oil till golden brown.
- Serve with wedges of lime and tartar sauce.
