Ingredients:

• 4 – large fish fillets
• 1.5 tbsp – melted Butter
• 1 cup – flour
• 1 tbsp – chopped Coriander leaves
• 1 tsp – chilli powder
• salt and pepper to taste
• oil for frying
• 2 – eggs (separated)
• For serving:
• wedge of Lime
• tartar sauce

Method:

  1. Put the flour, egg yolks, chilli powder, salt, pepper, cheese and butter in a bowl.
  2. Cover and refrigerate for about 3 hours.
  3. Beat the egg whites till stiff.
  4. Add to the batter along with the coriander leaves.
  5. Coat the fish fillets generously with the batter.
  6. Deep fry in hot oil till golden brown.
  7. Serve with wedges of lime and tartar sauce.
