Ingredients:

• 500 g – Chicken
• 8 spring onions, chopped
• 1 – stalk Lemon grass, chopped
• 1 – Clove garlic, crushed
• 1 – Egg white
• 1 tbsp – oil
• 1 tbsp – chopped fresh Coriander leaves
• 1 tbsp – Thai sauce
• 2 tsp – chilli sauce
• 8 slices – stale bread, crusts removed
• oil for shallow frying

Method:

  1. Combine the chicken, spring onions, lemon grass, garlic, egg white, oil coriander, sauces and lemon juice in a food processor.
  2. Process until finely chopped.
  3. Spread the chicken mixture generously over the bread.
  4. Cut each slice into 4 triangles.
  5. Heat 1-2 cm oil in a pan.
  6. Add the bread and cook, chicken side down for 2-3 minutes.
  7. Turn over and cook the other side for 1 minute or until golden and crisp.
  8. Drain well on paper towels.
