Ingredients:

• 1 lb – boneless skinless chicken, cut into 1 inch cubes
• 2 each – potatoes, tomatoes, bell peppers – cut into 1 inch cubes
• Bamboo skewers – as required
• For the marinade:
• 1/4 cup – yogurt
• 1 tsp each – ginger-garlic paste
• 1 tsp – Green chilli paste
• 1 tsp – cumin powder
• 1 tsp – coriander powder
• 1 tsp – aniseed
• 1/4 tsp – Turmeric powder
• Chilli powder to taste
• 1/4 tsp – Garam Masala (optional)
• Salt to taste
• 2 tsp – Lime juice
• Red/orange colour.

Method:

  1. Mix all the ingredients in the yogurt and keep for about 10 mins.
  2. Marinate the chicken and vegetables in it for about an hour in the refrigerator.
  3. String the skewers with alternate pieces of chicken and vegetables.
  4. Place on a barbecue grill or bake in the oven for 15 mins
  5. Remove from heat and coat the pieces with the remaining marinade.
  6. Turn the oven to broil for another 5 – 10 minutes until the chicken is cooked well.
  7. Serve hot.
