
Ingredients:
• 1 lb – boneless skinless chicken, cut into 1 inch cubes
• 2 each – potatoes, tomatoes, bell peppers – cut into 1 inch cubes
• Bamboo skewers – as required
• For the marinade:
• 1/4 cup – yogurt
• 1 tsp each – ginger-garlic paste
• 1 tsp – Green chilli paste
• 1 tsp – cumin powder
• 1 tsp – coriander powder
• 1 tsp – aniseed
• 1/4 tsp – Turmeric powder
• Chilli powder to taste
• 1/4 tsp – Garam Masala (optional)
• Salt to taste
• 2 tsp – Lime juice
• Red/orange colour.
Method:
- Mix all the ingredients in the yogurt and keep for about 10 mins.
- Marinate the chicken and vegetables in it for about an hour in the refrigerator.
- String the skewers with alternate pieces of chicken and vegetables.
- Place on a barbecue grill or bake in the oven for 15 mins
- Remove from heat and coat the pieces with the remaining marinade.
- Turn the oven to broil for another 5 – 10 minutes until the chicken is cooked well.
- Serve hot.
