Ingredients:

• 1 kg – Chicken breasts (skinless and boneless)
• 250 gm – Hummus
• 4 Cloves Garlic – crushed
• 6 tbsp – green olives, finely chopped
• 4 tbsp – Basil leaves, chopped
• Juice of 1 Lemon
• Salt to taste
• 2 tbsp – coriander leaves, chopped
• Tabasco sauce
• Extra green Olives to garnish

Method:

  1. Halve each chicken breast.
  2. Place the chicken in a shallow dish.
  3. Add garlic and half the quantity of hummus.
  4. Turn chicken to coat with hummus on both sides.
  5. Let the chicken marinate for 2 hours.
  6. Remove the chicken breasts from the dish.
  7. Dry them gently with absorbent paper towels.
  8. Brush the chicken with olive oil.
  9. Barbeque quickly over medium heat until cooked through.
  10. Remove from the grill, sprinkle lemon juice over each chicken piece, and add salt and Tabasco to taste.
  11. Combine remaining hummus, finely chopped olives and basil leaves in a bowl.
  12. Spread hummus mixture on each chicken piece.
  13. Garnish with chopped coriander and olives.
  14. Serve with roasted capsicum.
