Ingredients:
• 60g- Sugar
• 2- Eggs, white and yolk separated
• 300ml – Milk
• 10g- Gelatine, dissolved in lukewarm water
• 5ml -Chocolate essence
• 50g- Chocolate, melted
• For the topping:
• 4 Cherries
• 1 tbsp- Jam
• 1 tbsp -Brandy
• 1/2 tbsp -Honey
• 2 tbsp – Water
• A few sprigs of Mint
Method:
- Beat egg yolks along with the sugar.
- Add lukewarm milk and cook on low heat until the mixture coats the back of a spoon.
- Add the dissolved gelatine, melted chocolate, and chocolate essence.
- Allow the mixture to cool, and then place it in the refrigerator.
- Beat the egg whites until stiff, and stir into the semi-set mousse.
- Place in the refrigerator again and allow to set completely.
- Place the jam and water in a bowl and mix well until the jam dissolves and forms a smooth sauce.
- Add brandy and honey and whisk well together.
- Garnish with mint leaves, cheeries and serve the mousse with the jam sauce poured on top.
