Ingredients:
• 3/4 cup – Egg substitute
• 1/4 cup – low fat plain yogurt
• 1.5 cups – light Brown sugar
• 2 tbsp – melted Butter
• 2 tbsp – Canola Oil
• 1.5 tsp – vanilla
• 1 cup – all purpose flour
• 1/2 cup – cocoa powder
• 1/2 tsp – salt
• 1/3 cup – powdered Sugar
• Margarine or vegetable oil
Method:
- Beat the egg substitute and yogurt with the brown sugar until quite frothy.
- Beat in the butter, oil, and vanilla. Mix until the sugar is mostly dissolved.
- Sift the dry ingredients together and use a whisk to stir them into the wet ingredients. Do so gently by hand until just mixed.
- Lightly oil a 7 x 11 pan and spread the batter out evenly.
- Bake in a preheated oven until a skewer comes out dry or with a little crumb.
- Let it cool completely before cutting.
- Sift a little powdered sugar on the top after cutting but before serving.
- Top with a scoop of your favourite low fat or fat-free frozen yogurt.
