Ingredients:

• 300 g – flour
• 200 g – desiccated Coconut
• 200 g – Butter
• 200 g – powdered Sugar
• 3 – eggs, beaten
• 100 g – cashew nuts, finely chopped
• 1 tsp – vanilla essence

Method:

  1. Sift the flour, salt and baking powder together.
  2. Cream the butter and sugar together in a suitable bowl.
  3. Add the beaten eggs, desiccated coconut, cashew nuts and vanilla essence and mix well.
  4. Fold in the flour, a little at a time.
  5. Add a little milk if the mixture is too thick.
  6. Grease two baking trays and place a tsp of the batter on each, leaving enough space between them, to allow the mixture to spread during baking.
  7. Bake in a moderate oven for about 15-20 minutes till golden brown.
