Ingredients:

• 1 cup – Freshly grated Coconut
• 3 tbsp – Sugar
• 1/2 tsp – Vanilla essence
• 1/2 cup – Milk
• 2 cups – Flour/maida
• 2 – Eggs, beaten
• 1/2 tsp – Salt
• 1 tbsp – Ghee

Method:

  1. Mix the coconut, vanilla essence and sugar together.
  2. Cook on a low flame till sugar melts and keep aside
  3. Make a batter with the flour, beaten egg, milk and salt.
  4. Add a little water if the batter is too thick.
  5. Grease a frying pan and spread a spoonful of batter on the pan to form a pancake.
  6. Cook on both sides.
  7. Put a spoonful of coconut filling in the centre and fold the side over.
  8. Serve with jam or honey.
