Ingredients:
• 1 cup – Freshly grated Coconut
• 3 tbsp – Sugar
• 1/2 tsp – Vanilla essence
• 1/2 cup – Milk
• 2 cups – Flour/maida
• 2 – Eggs, beaten
• 1/2 tsp – Salt
• 1 tbsp – Ghee
Method:
- Mix the coconut, vanilla essence and sugar together.
- Cook on a low flame till sugar melts and keep aside
- Make a batter with the flour, beaten egg, milk and salt.
- Add a little water if the batter is too thick.
- Grease a frying pan and spread a spoonful of batter on the pan to form a pancake.
- Cook on both sides.
- Put a spoonful of coconut filling in the centre and fold the side over.
- Serve with jam or honey.
