Ingredients:

• 1 – grated Coconut
• 3-4 tsp – Coconut oil
• 3 – Green chillies chopped fine
• 1 – small piece of Ginger chopped fine
• 1 tsp – urad dhal
• 1 tsp – Channa dhal
• 1 tsp – Mustard Seeds
• 1 tsp – Ghee
• 2 tbsp – Cashew nuts
• 1 sprig – Curry leaves
• Salt to taste
• 2.5 cup – basmati Rice
• 5 cup – water
• Chopped coriander – for garnish

Method:

  1. Cook the rice in 5 cup of water and set aside
  2. Heat 1 tsp of coconut oil in the sauce pan and add grated coconut
  3. Fry for 3-4 minutes till coconut becomes dry. Take it out and keep aside.
  4. Add remaining coconut oil and mustard seeds.
  5. Once the mustard seeds splutter, add urad dhal, channa dhal, green chillies, ginger and curry leaves.
  6. Fry till the dal becomes brown. Remove it and keep aside.
  7. Add some ghee in the pan and fry the cashewnuts till golden brown.
  8. Take a bowl and add cooked rice, salt to taste, coconut, tempering and mix them well.
  9. Top with cashewnuts and coriander
  10. Serve hot
