
Ingredients:
• 2 cups Corn kernels
• 6 green chillies, roasted, peeled, deseeded and finely chopped
• 1 red capsicum, roasted, peeled, deseeded and finely diced
• 2 tbsp Ginger juice
• 1.5 tsp Olive oil
• 1/4 tsp Sugar
• 5 tbsps onion, finely chopped
• 1.25 tbsp oil
• 1/4 tsp coriander powder
• 1 tbsp finely chopped Basil leaves
• salt to taste
Method:
- Boil the kernels in a mixture of 2 tbsps water, ginger juice, oil, salt and sugar. Cook over medium heat.
- Heat oil in a saucepan. Saute the onions on medium heat for about 3-4 minutes.
- Add all the other ingredients. Mix well in a bowl.
- Serve with chicken, grilled lamb or as a garnish for soup.
