Ingredients:

• 1/2 cup – grated cheddar cheese
• 1/2 cup – grated Swiss cheese
• 1/2 cup – yellow cornmeal
• 1/2 cup – unbleached white flour
• 1/2 cup – Cottage cheese
• 2 eggs, beaten
• salt to taste

Method:

  1. Mix all ingredients together thoroughly in a bowl.
  2. Use your hands to form 1-inch balls.
  3. In a large pot, bring 4 quarts of water to rolling boil.
  4. Add as many dumplings as possible without crowding.
  5. Reduce heat, cover and allow to simmer for 10 minutes.
  6. Remove with a slotted spoon.
