Ingredients:

• 8 pieces boneless fish fillet
• equal quantities of Corn flour and plain flour mixed with a little water to make batter
• 1 cup – finely crushed cornflakes
• Oil for deep frying
• For the marinade:
• 2 tbsp – Mint chutney
• 2 tbsp – Vinegar or Lime juice
• 1.5 tsp – Red Chilli powder
• For the Mint chutney:
• 1 bunch fresh Mint leaves
• 4 Green chillies
• 2 tbsp – Vinegar or Lemon juice
• 2 medium Onions
• 1 tsp – Cumin seeds
• 1 tsp – grated Ginger
• 1 Clove – Garlic
• Salt to taste

Method:

  1. Mint chutney:
  2. Grind all ingredients together.
  3. For the fish:
  4. Combine and mix all ingredients for marinade in a bowl.
  5. Add fish fillets, and coat well with the marinade.
  6. Leave the fish to marinade for 30 minutes or 1 hour.
  7. Dip the fish in corn flour and plain flour batter and then coat the fish with fresh cornflakes.
  8. Deep-fry in hot oil.
  9. Serve hot with extra mint chutney mixed in yoghurt.
