Ingredients:
• hard-boiled eggs – 6
• Onion – 1 cup, sliced
• Curry leaves – 1/3 cup, shredded
• oil – 4 tbsp
• Garlic – 4 flakes, peeled and lightly crushed
• chili powder – 2 tsp
• Turmeric powder – ½ tsp
• coriander powder – 2 tsp
• thick Tamarind juice – 2 tbsp
• salt to taste
Method:
- Shell the eggs and grate them coarsely.
- Heat oil in a fry pan. Add the garlic.
- When the garlic turns dark brown, add onion and fry till brown.
- Add all the powders and curry leaves.
- Fry for few seconds.
- Add the tamarind juice and 2 tbsp of water.
- Simmer for 2 minutes.
- Add eggs and salt.
- Mix well and keep covered on a low flame for 2-3 minutes.
- Serve hot with chapathis or steamed rice and rasam.
