
Ingredients:
• 1/2 cup – fresh dates, stoned
• 6 tbsp – flour
• 1/4 cup – softened Butter
• 1 cup – Milk powder
• 2 tbsp – finely grated Orange rind
• 3 – eggs, separated
• 3 tbsp – Sugar
• For the Orange Sauce:
• 1/4 cup – Sugar
• 1 tbsp – Corn flour
• 1 cup – Orange juice
• 2 tbsp – finely grated Orange rind
• 1/2 cup – Cream
Method:
- Puree dates in blender or food processor.
- Mix with flour and butter.
- Heat milk until nearly boiling and gradually stir into date mixture.
- Cook over hot water for about 5 minutes, stirring constantly.
- Add orange rind.
- Beat egg yolks until thick and beat in sugar gradually.
- Stir in hot mixture slowly. Cool.
- Fold in stiffly beaten egg whites, pour into greased souffle dish, place in pan of hot water and bake at 160 degrees C for 1 hour until set.
- Serve with orange sauce.
- To Make Orange Sauce:
- Mix sugar and corn flour in saucepan.
- Add orange juice and rind and cook over medium heat, stirring constantly.
- Cover and cook over boiling water for 10 more minutes.
- Just before serving, stir in cream.
