Ingredients:

• 1/2 cup – fresh dates, stoned
• 6 tbsp – flour
• 1/4 cup – softened Butter
• 1 cup – Milk powder
• 2 tbsp – finely grated Orange rind
• 3 – eggs, separated
• 3 tbsp – Sugar
• For the Orange Sauce:
• 1/4 cup – Sugar
• 1 tbsp – Corn flour
• 1 cup – Orange juice
• 2 tbsp – finely grated Orange rind
• 1/2 cup – Cream

Method:

  1. Puree dates in blender or food processor.
  2. Mix with flour and butter.
  3. Heat milk until nearly boiling and gradually stir into date mixture.
  4. Cook over hot water for about 5 minutes, stirring constantly.
  5. Add orange rind.
  6. Beat egg yolks until thick and beat in sugar gradually.
  7. Stir in hot mixture slowly. Cool.
  8. Fold in stiffly beaten egg whites, pour into greased souffle dish, place in pan of hot water and bake at 160 degrees C for 1 hour until set.
  9. Serve with orange sauce.
  10. To Make Orange Sauce:
  11. Mix sugar and corn flour in saucepan.
  12. Add orange juice and rind and cook over medium heat, stirring constantly.
  13. Cover and cook over boiling water for 10 more minutes.
  14. Just before serving, stir in cream.
