Ingredients:
• 1 – whole duck
• Salt to taste
• 3 tsp – pepper powder
• 3 tbsp – oil.
Method:
- Marinate the duck with the salt and pepper for about 1/2 an hour.
- Heat oil or ghee in a thick bottomed pan or pressure cooker and add the whole duck.
- Turn from side and fry for about for about 5 minutes.
- Add 2 cups of water.
- Cover the vessel with a tight lid and simmer over low heat turning the duck occasionally till it is cooked and all the water is absorbed.
- Continue to cook till the duck is roasted to a lovely golden brown.
- Serve with roasted potatoes and boiled veggies.
