Ingredients:
• 3 – eggs (beaten with enough pepper powder and salt)
• 1 – onion, finely chopped
• 1 tsp each – Ginger and garlic, finely chopped
• 1/2 cup each – carrot, beans, capsicum, finely chopped
• Oil to saute
• 3 cups – basmati rice, cooked
• 1 tsp – pepper powder
Method:
- Heat oil and saute the onion.
- Add ginger and garlic and then the eggs and scramble them. Add in the vegetables and cook.
- Finally, add the cooked rice and pepper powder and mix well.
- Serve hot.
