Ingredients:

• 3 – eggs (beaten with enough pepper powder and salt)
• 1 – onion, finely chopped
• 1 tsp each – Ginger and garlic, finely chopped
• 1/2 cup each – carrot, beans, capsicum, finely chopped
• Oil to saute
• 3 cups – basmati rice, cooked
• 1 tsp – pepper powder

Method:

  1. Heat oil and saute the onion.
  2. Add ginger and garlic and then the eggs and scramble them. Add in the vegetables and cook.
  3. Finally, add the cooked rice and pepper powder and mix well.
  4. Serve hot.
