Ingredients:

• 2 – Egg whites
• 1 tsp – Milk
• 2 tsp – finely chopped Onion
• 1 tbsp – chopped Coriander leaves or a mix of Mint and Coriander leaves
• Salt to taste
• Pepper powder to taste
• 1 tsp – cooking oil

Method:

  1. Whisk egg whites, milk, salt, and pepper together in a medium bowl until soft peaks form (quantity will be double).
  2. Add chopped onions, coriander leaves and mix well.
  3. Lightly coat an omelette pan or small skillet with cooking oil and heat over medium heat for 1 minute.
  4. Pour egg white mixture into pan and cook until eggs begin to set on bottom.
  5. The underside should be light golden in colour.
  6. Remove the omelette from the pan carefully.
  7. Flip over omelette and cook the other side.
  8. Once it turns light golden colour, remove carefully with a flat spatula.
  9. Serve with whole wheat bread / milk / fruit juice.
