Ingredients:
• 1/2 cup – Grated Carrots
• 1 cup – quick cooking oats
• 1 cup – Wheat pastry flour
• 1/2 cup – All-purpose flour
• 3 tbsp – Apple sauce
• 1 cup – Sugar (grounded)
• 1/4 cup – Butter (room temperature)
• 1 tsp – Baking soda
• 1/2 tsp – Baking powder
• 1 tsp – Ginger powder
• 2 tbsp – Almond nuts (ground coarsely)
• A pinch of salt
Method:
- Beat together the butter and grounded sugar (or confectioner’s sugar) until soft and creamy. Mix together in a large bowl the quick cooking oats, wheat flour, all-purpose flour, baking soda, baking powder, grounded almond nuts and grated carrots.
- Add the creamed sugared butter, ginger powder and apple sauce slowly to the flour mixture and make everything into a soft dough.
- Preheat the oven to 350 degree F. Line a baking sheet over a baking pan and grease the sheet.
- Take a small portion from the dough and roll small golf-sized balls of it.
- Place these rolled dough over the greased baking sheet leaving some space between them and bake for 15-20 minutes in middle rack or until they turn golden brown.
