Ingredients:

• 1 cup – all-purpose flour
• 1 cup – rolled oats
• 3/4 cup – Canola Oil
• 1/2 cup – Sugar
• 1/2 cup – packed Brown sugar
• 3 tsp – Egg replacer powder + 4 tbsp – warm water
• 1/4 cup – dry Cranberries
• 1/4 cup – chocolate chips
• 1 tsp – vanilla essence
• 1 tsp – Ginger powder
• 1/4 cup – Orange rinds
• 1/2 tsp – baking soda

Method:

  1. Preheat the oven at 300F.
  2. In a bowl, whisk canola oil, sugar, brown sugar, egg replacer powder paste together, until the sugar get dissolved.
  3. Meanwhile mix the all-purpose flour, oats, baking soda, ginger powder, dry cranberries and chocolate chips together .
  4. Add the dry ingredients little by little to the oil-sugar paste and turn them to a dough.
  5. To this add the orange rinds and vanilla essence and knead again.
  6. Make small balls from the dough and place them over the baking sheet, just flat them with fork.
  7. Leave some space between each cookie (they will spread while baking) and bake them for 30 minutes.
