Ingredients:

• 1 cup + 1 tsp – Cooked Quinoa
• 1 cup – Stone-ground cornmeal (finely ground)
• 1 tsp – Baking soda
• 1 tsp – Baking powder
• 1/2 tsp – Chilli flakes
• 1 cup – Milk
• 1/4 cup – Olive oil
• 1/2 cup – Yogurt
• 1/4 cup – Honey
• 1 tbsp – Dry Parsley leaves
• Salt

Method:

  1. Preheat the oven to 400 degrees F and line a baking sheet over a square baking pan.
  2. Mix the cooked quinoa, cornmeal, baking soda, baking powder, chilli flakes, salt and dry parsley leaves together in a bowl.
  3. Mix the milk, olive oil, honey and yogurt in another bowl. Whisk until they get mixed well.
  4. Add the wet ingredients to the dry ingredients.
  5. Pour the batter into the already prepared baking pan, sprinkle 1 tsp cooked quinoa over the batter and bake for 20-25 minutes in the middle rack until a skewer inserted in the centre comes out clean.
  6. Cool completely, cut into pieces and enjoy with soup or a cup of tea.
