Ingredients:
• 1/4 kg – brinjal/eggplant
• 1 – Onion
• 2 – Tomato
• 1/2 cup – groundnuts
• 1 tbsp – Cumin seeds
• 1 tbsp – sesame seeds
• 1 tbsp – Red Chilli powder
• 2 tbsp – coriander powder
• 1 tsp – Turmeric powder
• asafetida, a pinch
• salt to taste
• oil for frying
Method:
- Cut brinjal into four pieces.
- Soak it in water immediately after cutting.
- Fry groundnuts, sesame seeds, cumin seeds and powder it.
- Grind onions and tomatoes and make a paste.
- Keep other ingredients ready.
- Heat oil in a pan/kadai, splutter cumin seeds, add asafoetida, then add brinjals and fry till it becomes soft.
- Now add the ground onion and tomato paste.
- Add red chilli powder, coriander powder, and finally groundnut paste.
- Add little salt. Mix them well.
