Ingredients:

• 1/4 kg – brinjal/eggplant
• 1 – Onion
• 2 – Tomato
• 1/2 cup – groundnuts
• 1 tbsp – Cumin seeds
• 1 tbsp – sesame seeds
• 1 tbsp – Red Chilli powder
• 2 tbsp – coriander powder
• 1 tsp – Turmeric powder
• asafetida, a pinch
• salt to taste
• oil for frying

Method:

  1. Cut brinjal into four pieces.
  2. Soak it in water immediately after cutting.
  3. Fry groundnuts, sesame seeds, cumin seeds and powder it.
  4. Grind onions and tomatoes and make a paste.
  5. Keep other ingredients ready.
  6. Heat oil in a pan/kadai, splutter cumin seeds, add asafoetida, then add brinjals and fry till it becomes soft.
  7. Now add the ground onion and tomato paste.
  8. Add red chilli powder, coriander powder, and finally groundnut paste.
  9. Add little salt. Mix them well.
