Ingredients:

• 1 cup – Peel of Ridge gourd
• 5 to 6 in nos. – Dry Red Chillies
• 2 to 3 tbsps – Sesame seed and dry Coconut powder
• 1 tsp – Tamarind paste
• 1/2 tsp – Jaggery
• Salt as per taste
• Small amount (if required) Water
• 5 to 6 – Curry leaves
• For seasoning :
• 2 tbsp – Oil
• 1/2 tsp – Mustard
• A little more than a pinch – Turmeric
• A little more than a pinch – Hing

Method:

  1. Dry roast sesame seeds and dry coconut powder and grind them together.
  2. Wash the ridge gourd thoroughly in hot running water.
  3. Peel it and fry it in two tbsps of oil along with a little salt, dry red chillies and curry leaves.
  4. Fry it till the peel gets tender or cooked.
  5. Put the cooked peel, the above prepared powder, jaggery, tamarind, salt in mixer and grind to a fine paste.
  6. Empty the contents into a container and add the seasoning. Tastes excellent with rice, chapatti dosa, stale jowar roti (bhakri) etc.
