
Ingredients:
• 10 – large Green chillies
• 15 – large dry Red Chillies
• 3 kg – fish (sardines, surmai, mackerels, suitable for frying)
• 3 pods – Garlic
• 1 inch – Ginger
• 1 tsp – jeera/cumin seeds (ground)
• Salt to taste
• Oil for frying
• Turmeric powder as required
• 1 inch – turmeric/haldi (ground)
• 3 cups – Vinegar
Method:
- Cut the fish, remove the entrails and wash it until clean and ready to be cooked.
- Apply turmeric powder and marinate for an hour.
- Grind dry red chillies, turmeric powder, jeera with a little vinegar.
- Slice green chillies, flakes of garlic and ginger and mix them to make a masala.
- Fry the fish in a pan. Once done, remove and let it cool.
- In a separate vessel, add vinegar, salt, the ground masala and the sliced masala and boil for 30 minutes.
- Cool it and add the fried fish.
