Ingredients:

• 10 – large Green chillies
• 15 – large dry Red Chillies
• 3 kg – fish (sardines, surmai, mackerels, suitable for frying)
• 3 pods – Garlic
• 1 inch – Ginger
• 1 tsp – jeera/cumin seeds (ground)
• Salt to taste
• Oil for frying
• Turmeric powder as required
• 1 inch – turmeric/haldi (ground)
• 3 cups – Vinegar

Method:

  1. Cut the fish, remove the entrails and wash it until clean and ready to be cooked.
  2. Apply turmeric powder and marinate for an hour.
  3. Grind dry red chillies, turmeric powder, jeera with a little vinegar.
  4. Slice green chillies, flakes of garlic and ginger and mix them to make a masala.
  5. Fry the fish in a pan. Once done, remove and let it cool.
  6. In a separate vessel, add vinegar, salt, the ground masala and the sliced masala and boil for 30 minutes.
  7. Cool it and add the fried fish.
