
Ingredients:
• 3 – eggs
• 1 cup – thawed frozen fruits
• 2 tbsp – icing Sugar
• 2 tbsp – Butter
• 1/8 tsp – Nutmeg
• 2 to 3 – drops vanilla essence
Method:
- Separate the eggs. Lightly beat the yolk and icing.
- Whisk the whites till stiff.
- Add vanilla essence and nutmeg.
- Fold in the yolk.
- Heat 1 tbsp butter. Pour 1/2 of egg mixture.
- When it sizzles, pour the remaining half of the mixture.
- Use spatula to gently push cooked portions to the centre, tilting the pan to allow the uncooked egg to flow into empty spaces.
- Continue to do this until omelette is set but still moist.
- Let it cook on slow flame till it is golden from top.
- Spread half of fruits on half of omelette.
- Let it cook for 1/2 a minute.
- Slide into plate. Fold over the other half.
- Repeat for other omelette.
- Serve hot.
