Ingredients:

• 225 gms-cooked chicken, Crab or lobster Meat
• 225 gms-tomatoes, blanched and skinned
• Oil for frying
• 225 gms-spring Onions
• 2-3-mushrooms
• 115 gms-bamboo shoots
• Stock
• 1 tbsp-cornflour
• 1-egg
• Tomato sauce to taste

Method:

  1. Cut chicken or shellfish into small pieces
  2. Thinly slice all vegetables in a little oil for a few minutes
  3. Add chicken or fish. Season
  4. Pour in just enough stock to cover
  5. Add soya sauce and boil for 2-3 minutes
  6. Add cornflour mixed with a little water and continue cooking until thickened
  7. Beat egg. Season and prepare an omelette
  8. Serve chicken and vegetables with omelette on top and a little tomato sauce poured over it
