Ingredients:

• 2 cups – All-purpose flour
• 1 cup – Whole Wheat flour
• 2 tsp – Active Dry yeast
• 1 tsp – Salt
• 1 tsp – Sugar
• 1/4 cup – Feta cheese (mashed)
• 1/4 cup – Olive oil
• 1/2 cup – Warm Milk
• 3/4 cup – Milk
• For filling:
• 2 – Potatoes (cooked and mashed)
• 1/2 cup – Frozen Green peas
• 1 – Onion (chopped)
• 1/2 tsp – Cumin seeds
• 1 tsp – Garam Masala
• 1/2 tsp – Chaat masala
• 2 – Green chillies (chopped)
• Oil
• Salt
• Grated Gruyere cheese (as per need)

Method:

  1. Dissolve the sugar and the yeast in the 1/2 cup of warm milk. Keep aside for about 5 minutes till the yeast mixture bubbles up.
  2. Put flour, salt, olive oil, mashed feta cheese in the bowl and mix it well with your fingers.
  3. Add the yeast mixture and the remaining milk. Knead till you have a soft, smooth and pliable dough which is not sticky.
  4. Add a little extra flour if your dough is sticky.
  5. Shape the dough into a ball. Place it in a bowl greased with oil.
  6. Turn the dough. Coat it completely with oil.
  7. Cover and let it rise for 2 hours or until almost double in volume.
  8. Filling:
  9. Heat enough oil in a pan. Let the cumin seeds crack.
  10. Add the chopped onions and chopped green chillies. Cook until the onions turn translucent.
  11. Add the green peas. Cook for few minutes.
  12. Add the mashed potatoes, chaat masala garam masala and salt.
  13. Cook in simmer until everything gets well cooked.
  14. Put off the stove and let it cool completely.
  15. For assembling:
  16. Preheat the oven to 350F.
  17. Dust your work surface lightly with flour.
  18. Punch down the dough. Shape it into a square and roll the dough out into a large square.
  19. Evenly spread the cooled potato peas masala and then the grated cheese.
  20. Lightly press the topping into the dough to ensure the topping does not fall off when you are stacking the strips.
  21. Using a sharp knife, cut straight down through the stack, dividing it into 6 equal pieces (6 square stacks).
  22. Grease and lightly flour a loaf tin.
  23. Layer the square slice. Cut sides down into the loaf tin.
  24. Cover the loaf tin dough with a towel and allow the dough to rise for an hour.
  25. Sprinkle the gruyere cheese on the top of the bread.
  26. Bake the dough at 350 F for about 30 to 40 minutes until it is done and the top is golden brown.
