Ingredients:

• 500 gm – carrots, scraped and core removed
• 1 liter Milk
• 120 gm – malai
• 500 gm – Sugar
• 120 gm – rice, powdered
• 120 gm – Ghee
• 60 gm – almonds, blanched and shredded
• 60 gm – raisins, cut into 2 pieces

Method:

  1. Scrape the carrots, cut and remove both ends.
  2. Then cut into halves lengthwise, and remove the hard core from the middle.
  3. Cut into 1″ pieces.
  4. Boil carrots in milk.
  5. When tender, dry the milk completely.
  6. Grind carrots finely.
  7. In a kadhai, heat the ghee, add carrots, malai, sugar and rice powder and cook on low fire, stirring regularly till of thick consistency.
  8. Serve at once. While serving, dress with almonds and raisins.
