Ingredients:

• 6 – red, thick carrots, washed and scrapped
• 1 tbsp – Butter
• 1 tbsp – Honey
• 1/2 tbsp – Sugar
• 1/8 tsp – Ginger powder
• 1/2 cup – water
• 1 tsp – chopped Mint leaves
• 1/2 tsp – salt
• Pepper as per taste

Method:

  1. Peel carrots and nip off as little of the base end as possible to make a clean horizontal surface.
  2. Insert a toothpick halfway inside the carrot base.
  3. Boil water, and cook carrots for 3-4 minutes
  4. Drain, cool and dab with a cloth
  5. In a saucepan melt butter, add sugar and rest of the ingredients
  6. Simmer till carrots are coated with sauce
  7. Sprinkle chopped mint leaves and pepper.
  8. Garnish with coriander leaves and serve hot.
