
Ingredients:
• 6 – red, thick carrots, washed and scrapped
• 1 tbsp – Butter
• 1 tbsp – Honey
• 1/2 tbsp – Sugar
• 1/8 tsp – Ginger powder
• 1/2 cup – water
• 1 tsp – chopped Mint leaves
• 1/2 tsp – salt
• Pepper as per taste
Method:
- Peel carrots and nip off as little of the base end as possible to make a clean horizontal surface.
- Insert a toothpick halfway inside the carrot base.
- Boil water, and cook carrots for 3-4 minutes
- Drain, cool and dab with a cloth
- In a saucepan melt butter, add sugar and rest of the ingredients
- Simmer till carrots are coated with sauce
- Sprinkle chopped mint leaves and pepper.
- Garnish with coriander leaves and serve hot.
