Ingredients:

• Okra – 1 kg
• Garlic – 1/2 a piece
• Onion – 1
• Tomato -1/2 a piece
• Coriander seeds – 3 tbsp
• Carom seeds – 1 tsp
• Cumin seeds – 3 tbsp
• Chilli powder – 2 tsp
• Salt – to taste
• Turmeric – 1/2 tsp
• Curry leaves – 3 to 4
• Rice flour – 2 tsp
• Oil – for frying
• Coriander leaves – a bunch

Method:

  1. Wash okra thoroughly and cut them into small rounds.
  2. Now grind coriander seeds, cumin seeds, carom seeds and 1/2 piece of raw garlic into fine powder.
  3. Transfer the cut okra into a spacious vessel and add salt, turmeric, chilli powder, rice flour, the ground powders and a little bit of oil.
  4. Mix thoroughly, so that the okra pieces are well coated with the spices.
  5. Now heat oil in a large pan, add the okra pieces and cook them on medium heat, till the pieces are properly done.
  6. After the pieces are well cooked, increase the heat and allow them to fry and simmer for a while.
  7. Now cut the onion and tomato into very small pieces.
  8. Add onions, tomatoes and cover it for some more time so that they get cooked well enough.
  9. Garnish with lots of coriander leaves on top.
