
Ingredients:
• Okra – 1 kg
• Garlic – 1/2 a piece
• Onion – 1
• Tomato -1/2 a piece
• Coriander seeds – 3 tbsp
• Carom seeds – 1 tsp
• Cumin seeds – 3 tbsp
• Chilli powder – 2 tsp
• Salt – to taste
• Turmeric – 1/2 tsp
• Curry leaves – 3 to 4
• Rice flour – 2 tsp
• Oil – for frying
• Coriander leaves – a bunch
Method:
- Wash okra thoroughly and cut them into small rounds.
- Now grind coriander seeds, cumin seeds, carom seeds and 1/2 piece of raw garlic into fine powder.
- Transfer the cut okra into a spacious vessel and add salt, turmeric, chilli powder, rice flour, the ground powders and a little bit of oil.
- Mix thoroughly, so that the okra pieces are well coated with the spices.
- Now heat oil in a large pan, add the okra pieces and cook them on medium heat, till the pieces are properly done.
- After the pieces are well cooked, increase the heat and allow them to fry and simmer for a while.
- Now cut the onion and tomato into very small pieces.
- Add onions, tomatoes and cover it for some more time so that they get cooked well enough.
- Garnish with lots of coriander leaves on top.
