Ingredients:

• Cauliflower – 1 medium size
• Milk – 1 litre
• Cardamom (elaichi) – 4
• Ghee – 2-3 tbsp
• Sugar
• Bay Leaves – 2 nos.

Method:

  1. Peel the top portion of the gobi and make sure the flower is separated (Peel out only about 1 cm. from the top). These tiny flowers will be used for the kheer. Heat ghee, add cardamom and bay leaves .
  2. Fry peeled gobi till light golden brown.
  3. Boil milk in a separate vessel till it turns thick and add fried gobi flowers along with ghee, cardamom and bay leaves in the milk.
  4. Boil till kheer is thicker.
  5. Add desired amount of sugar and boil again.
  6. Cool and serve.
