Ingredients:
• 1 beaten Egg
• 125 gm – plain flour
• 1.5 cup – castor Sugar
• 1.5 tsp – bicarbonate of soda
• 1.5 tsp – salt
• 1.5 tsp – Cinnamon
• 1 tsp – Ginger powder
• 1.5 cup – Butter
• 1.5 cup – chopped nuts or Walnuts
• 1.5 cup – Coconut
• 1 tbsp – golden syrup
• 1.5 cup – butterMilk or sour Milk
Method:
- Combine flour, sugar, bicarbonate of soda, salt, cinnamon and ginger.
- Rub in butter using finger tips until it resembles fine breadcrumbs.
- Remove 1.5 cup of the mixture and add nuts and coconut.
- Reserve for topping.
- Add egg to remainder of mixture with golden syrup and butter.
- Blend and line into a 20 cm greased round dish.
- Cook on medium for 3 to 4 mins.
