Ingredients:
• For Koftas :
• 500 g – minced Mutton
• 150 g – lard
• 1 tsp – Cinnamon powder
• 1 tsp – Cardamom powder
• 1 tbsp – salt
• For Gravy :
• 300 g – Curd
• 1/2 litre – bone stock
• 6 to 8 seeds – Cardamom
• 3 to 4 – Cardamom
• 2 tbsp – Ghee
• 150 g – Kashmir Onions
• 1 pod – Garlic
• A few strands – Saffron
Method:
- To prepare koftas : Make a paste of the spices and salt with a little water, knead it into the minced meat.
- Roll the minced meat into koftas, five cms in diameter.
- Boil the koftas in water on a low heat for about 20-25 minutes and keep aside.
- To prepare gravy :
- Put the curd and bone stock into a pan and cook for 30 minutes.
- Stir the mixture continuously to prevent curdling and to mix it well.
- Gradually add all other ingredients, except the saffron, to the gravy.
- Add the meat koftas to the gravy and cook for about 20-25 minutes.
- Add saffron and serve hot.
