Ingredients:

• ½ kg – sour, mature green Mango
• 400 to 500 g – sugar(depending on the sourness of mango)
• 2 tsp – black pepper corns, crushed
• 1 tsp – Cardamom powder

Method:

  1. Peel the mango and cut into big pieces.
  2. Add water to just cover the pieces. Cook till mango is soft.
  3. Cool the cooked mango and blend in a mixer.
  4. Add sugar, stir over low heat till sugar is dissolved.
  5. Add cardamom and pepper.
  6. Cool, transfer to a clean bottle and store in refrigerator.
  7. To serve, take 1 part of the concentrate and add 3 parts of ice cold water.
