Ingredients:

• 1.5 cups – flour (maida) sifted with 1/2 tsp – baking powder
• 1/4 tsp – salt
• 1 cup – fresh yogurt
• 1/2 cup – water (blend together with curd)
• 70 g – cheese, grated
• Oil for frying

Method:

  1. Mix the blended yogurt and sifted flour.
  2. Blend in the cheese.
  3. Whisk briskly and keep aside for 15 – 20 minutes.
  4. Now start making the syrup by boiling the sugar and water.
  5. Add the milk and remove the scum from the surface.
  6. Boil till you get a syrup of ‘one thread’ consistency.
  7. Heat oil, preferably in a non-stick frying pan.
  8. Put the jalebi mixture in a plastic bag and pipe 7cm rings in hot oil.
  9. Fry till golden and immerse in warm syrup for 5 – 7 minutes.
  10. Serve hot.
