
Ingredients:
• For Koftas:
• 1 cup – grated Bottle Gourd pieces
• 4 tbsp – besan flour
• 1/2 tsp – Ginger paste
• 1/2 tsp – Red Chilli powder
• 1/2 tsp – Garam Masala
• Salt
• For Gravy:
• 1.5 cups – fresh Tomato puree
• Left over Bottle Gourd juice
• 3/4 tsp – Cumin seeds
• 1 tsp – Ginger paste
• 1 tsp – Red Chilli powder
• 1 tsp – coriander powder
• 1/4 tsp – Turmeric powder
• 1 tsp – Garam Masala powder
• 8 – Cashew nuts
• 1/2 cup – Yoghurt
• 2 tbsp – Coriander leaves
Method:
- Preheat the oven to 350 F
- ?Mix both grated bottle gourd pieces and salt, keep aside
- Strain the water and keep aside to add to the gravy.
- Add the remaining ingredients to the bottle?gourd?pieces and make?small balls
- Bake for?20-25 mins in a?baking sheet?until its turns golden brown
- Heat oil and cumin seeds, splutter, add the?ginger paste and fry?for few?mins, grind finely the cashew nuts with yoghurt to a paste
- ?Immediately add the tomato puree, bottle gourd juice, red chilli powder, coriander powder, turmeric powder, garam masala powder, salt and bring them to boil
- Keep the flame in simmer and cook for few mins.
- Add gradually the cashew-yoghurt?paste and cook until the oil separates
- Finally add the?oven baked lauki koftas to the simmering gravy, cook for 2 mins. Garnish with the chopped coriander leaves.
- Serve hot.?
