Ingredients:

• Large Eggplant – 1
• Tamarind extract – 1.5 cups
• sesame oil
• mustard – 1 tbsp
• Fenugreek – 1 tsp
• Chana Dal – 1 tbsp
• Hing
• Turmeric powder
• salt – to taste
• For Powder:
• Fry in little oil and grind to powder
• coriander seeds- 2 tsp
• Red Chillies – 10
• kadalaiparuppu – 2 tsp

Method:

  1. Cut eggplant into small cubes
  2. Heat oil in a vessel, splutter mustards and add hing powder, fenugreek, and chana dal.
  3. Fry lightly and add the eggplant and fry for sometime in medium heat.
  4. Add tamarind extract, salt and let it boil till it turns semi solid.
  5. Add turmeric and ground powder.
  6. Let it boil for some more time till oil separates.
  7. Before removing from fire add little powdered fenugreek to the mixture.
