Ingredients:

• 1 cup – Gram flour/Besan
• 1/4 cup – Rice flour
• 1tsp – Chilli powder
• A few Curry leaves
• 1/4 cup – Raw Peanuts
• 20 – Cashew nuts
• 3 – Garlic Cloves (crushed)
• A pinch of baking soda
• Salt
• Oil for Deep Frying

Method:

  1. Mix the gram flour, rice flour, salt, baking soda and chilli powder in a vessel with enough water to make a thick batter without any lumps (the batter should resemble idli batter).
  2. Heat the oil for Deep Frying; add cashew nuts and fry until they turn brown.
  3. Remove, add the peanuts to the oil and fry until they turn brown. Remove.
  4. In the same oil, fry the crushed garlic cloves and curry leaves together until they turn crisp.
  5. Remove from the oil, and keep all these fried ingredients in a large vessel.
  6. Using a ladle, drop the batter through a boondhi ladle or a ladle with small round holes into hot oil.
  7. Fry until it turns crispy, remove with a slotted spoon, and drain the excess oil with a paper towel.
  8. Finish the remaining batter using the same process.
  9. Add the chilli powder to the boondhis, fried cashews, fried garlic, fried peanuts and curry leaves, toss it gently and store in an air-tight box.
  10. Enjoy with a cup of coffee.
