
Ingredients:
• 1 cup – Gram flour/Besan
• 1/4 cup – Rice flour
• 1tsp – Chilli powder
• A few Curry leaves
• 1/4 cup – Raw Peanuts
• 20 – Cashew nuts
• 3 – Garlic Cloves (crushed)
• A pinch of baking soda
• Salt
• Oil for Deep Frying
Method:
- Mix the gram flour, rice flour, salt, baking soda and chilli powder in a vessel with enough water to make a thick batter without any lumps (the batter should resemble idli batter).
- Heat the oil for Deep Frying; add cashew nuts and fry until they turn brown.
- Remove, add the peanuts to the oil and fry until they turn brown. Remove.
- In the same oil, fry the crushed garlic cloves and curry leaves together until they turn crisp.
- Remove from the oil, and keep all these fried ingredients in a large vessel.
- Using a ladle, drop the batter through a boondhi ladle or a ladle with small round holes into hot oil.
- Fry until it turns crispy, remove with a slotted spoon, and drain the excess oil with a paper towel.
- Finish the remaining batter using the same process.
- Add the chilli powder to the boondhis, fried cashews, fried garlic, fried peanuts and curry leaves, toss it gently and store in an air-tight box.
- Enjoy with a cup of coffee.
