
Ingredients:
• Coriander leaves – 1 bunch (cleaned and chopped)
• Basmati Rice – 2 cups
• Green chillies – 2 to 3
• Small Onions – 4 to 5
• Garlic – 1 pod (optional)
• Tamarind pulp – 1 tsp
• Jeera – 1tsp
• Salt to taste
• Sunflower or any cooking oil – 1 tbsp
• Gingili oil – 1/2 tbsp
Method:
- Soak rice in water for 15 minutes.
- Pressure cook rice with 4 cups water till al dente.
- Meanwhile, grind together coriander, green chilli, onion, garlic, salt and tamarind pulp.
- Heat sunflower oil.
- Splutter jeera seeds.
- Add the ground mixture and saute till the raw smell reduces.
- When you get a nice aroma switch off the stove.
- In a wide plate spread the rice, add gingili oil.
- Then, add the ground mixture and mix uniformly.
- Garnish it with fresh coriander chopped or grated carrot.
