Ingredients:

• 2 cups – lima beans (frozen or fresh)
• 1 – onion, big size
• 1 – tomato, medium size
• 2 pods – Garlic
• 1/2 tsp – Ginger paste
• chilli powder as desired
• 1.5 tsp – coriander powder
• Salt to taste
• Oil
• 1 tsp each – cumin seeds, Fennel seeds
• 2 – Cloves
• 1 – Cinnamon

Method:

  1. Chop the onion, tomato and garlic finely.
  2. Heat oil in a kadai and add cumin seeds, fennel seeds, clove and cinnamon to it.
  3. Then, add the chopped onions.
  4. Saute it till it becomes transparent.
  5. Now, add garlic and ginger paste to the onions and saute them for a few seconds.
  6. Add the chopped tomato to it.
  7. Then, add the chilli powder and the coriander powder.
  8. Saute it till it gets a slight brown color.
  9. Now, add the lima beans and stir it well.
  10. Add 1.5 cups of water to the lima beans mixture and salt.
  11. Cover the kadai with a lid and cook.
  12. Remove the lid when the lima beans curry is in a semi liquid form.
  13. Remove from the heat.
  14. Garnish it with chopped cilantro (coriander leaves).
