
Ingredients:
• 2 cups – rice, soaked
• 1 cup – cashews, chopped
• 1/2 cup – Ghee
• 1/2 cup – Mustard Seeds
• 1/2 – coconut, grated
• 6 – green chillies, seeded and chopped
• 4 to 5 – limes, juiced
• 1 tsp – Turmeric
• 1/2 tsp – salt
• 2 – curry leaves, chopped
• 1 tbsp – finely chopped Coriander leaves
• 1 – lime, sliced for garnish
Method:
- Cook the rice and keep aside.
- Add lime juice, coconut, turmeric and salt to cooked rice.
- Set aside.
- Heat ghee and fry mustard seeds until they pop.
- Add cashews, curry leaves and chillies, and cook for 3 minutes, stirring.
- Combine with rice and coriander leaves and mix well.
- Cover and cook over low heat for 15 minutes to heat through.
- Garnish with lime slices.
