
Ingredients:
• 1 cup – onion, chopped
• 1 tsp – dried Oregano
• 1 Clove garlic, minced
• 6 cups – Chicken broth (drain the fat)
• 2 cups – potatoes, chopped
• 1 cup – celery, chopped
• 1 cup – carrot, chopped
• 3 cups – boneless chicken, cooked and shredded
• 2 cups – spinach, chopped
• 1/2 cup – uncooked Egg noodles
• 1/4 tsp – black pepper
• 2 tbsp – Maida
Method:
- Mix all the ingredients except the flour and let them simmer for about half an hour, or till the vegetables are tender.
- To thicken the soup, mix the flour with 4 tbsp of stock.
- Stir the mixture into the soup, and then simmer for a bit longer. Serve.
