
Ingredients:
• 2 cups – Mango (preferably Alfonzo), peeled and cut into 1 cm cubes
• 1 cup – fresh lychees, peeled and chopped
• 300 ml – thick Coconut Milk
• 1 cup – Sugar
• 1 cup – whipping Cream
• 4 tsp – gelatine
• Mango slices, lychees and Cherries to decorate
Method:
- Soak gelatine in 4 tbsp of water for 10 minutes. Stir over a low flame to dissolve completely.
- Add it to the coconut milk. Add sugar and stir till dissolved.
- Beat the cream till thick.
- Reserve some of it in refrigerator for decoration.
- Place the coconut milk in a bowl of ice and stir till it begins to set.
- Fold in the remaining cream, mango and lychees.
- Pour in a bowl and leave in refrigerator to set.
- Serve decorated with reserved cream, mango, lychees and cherries.
