Ingredients:
• spaghetti (cook per pkg instructions)
• Olive oil
• chopped white Onions or Spring onions
• Potatoes (peeled, cubed)
• Italian seasoning (optional)/fresh Basil leaves (chopped) and some Oregano
• fresh Garlic (chopped)
• salt and pepper
• Balsamic Vinegar
• fresh Spinach leaves (chopped or torn)/tomatoes (de-seeded and diced) – [either/both optional]
• sliced Olives (green or black) – optional
• shredded cheese (any kind – melting or hard non-melting, or a combo of both)
• shrimp/prawns (cooked)
Method:
- In two separate pots- boil cubed potatoes – cook spaghetti as instructed on packaging – remove both from heat when cooked but still firm. Run under cold water; drain and set aside. Heat olive oil in pan, add chopped onion and garlic ( plus shrimp, if used) and stir for a minute. Remove from heat. Add cooked spaghetti, potatoes , salt, pepper, seasoning, cheese, balsamic vinegar (per taste), olives, and mix well right away.
- Leave covered to marinate for an hour. Can be eaten cold or heated up in the microwave.
- Tastes even better the next day .
- Add in spinach and or tomatoes at the end, if you like, just a few minutes before serving (tastes better that way – fresh and not too cooked).
