Ingredients:

• Cashew nuts – 1/2 kg
• salt – one and a half tsp
• gram flour (Besan) – 1/2 cup
• Rice flour – 1/2 cup
• chilli powder – 1 to 2 tsp
• thymol seeds (ajwain, omam) – 1/2 tsp
• asafetida – little

Method:

  1. Mix salt with one and a half cup of water. Sprinkle on cashew nuts and mix well.
  2. Add remaining ingredients and mix. Sprinkle some water if necessary to make the masala stick to the cashew nuts. Deep fry in moderately hot oil. Cool and store.
