Ingredients:

• 4 eggs, separated
• 1/2 cup – grated cheese
• 1/4 cup – Milk
• 1/2 cup – mashed Potato
• 1 tsp – Butter
• salt and pepper to taste

Method:

  1. Beat the egg whites stiff and keep aside.
  2. Beat the egg yolks well and blend in the mashed potato.
  3. Add milk and mix thoroughly.
  4. Fold into the egg whites and add the salt and pepper.
  5. Melt the butter in a frying pan and pour in the egg mixture.
  6. Cook until golden brown underneath.
  7. Sprinkle over with cheese, fold and serve immediately.
