Ingredients:
• eggs – 4
• Tomatoes – 2 (big)
• Onion – 1 (big)
• Ginger- Garlic paste – 2 tsp
• Garam Masala – 1.5 tsp
• Green chillies – 5
• Cilantro leaves – 1/2 bunch
• Oil, Mustard Seeds and Curry leaves for tempering
Method:
- Take a pan, pour little oil and temper mustard seeds and curry leaves.
- To this, add chopped onions, chillies and fry till brown.
- Add chopped tomatoes, ginger-garlic paste, salt and garam masala.
- After the tomatoes are cooked, make some space for the eggs.
- Break the eggs one by one, far apart, without breaking the yolk.
- After some time turn it to the other side and make sure both the sides of the eggs are cooked.
- Garnish with chopped cilantro and serve with plain rice or chapatti.
