Ingredients:

• eggs – 4
• Tomatoes – 2 (big)
• Onion – 1 (big)
• Ginger- Garlic paste – 2 tsp
• Garam Masala – 1.5 tsp
• Green chillies – 5
• Cilantro leaves – 1/2 bunch
• Oil, Mustard Seeds and Curry leaves for tempering

Method:

  1. Take a pan, pour little oil and temper mustard seeds and curry leaves.
  2. To this, add chopped onions, chillies and fry till brown.
  3. Add chopped tomatoes, ginger-garlic paste, salt and garam masala.
  4. After the tomatoes are cooked, make some space for the eggs.
  5. Break the eggs one by one, far apart, without breaking the yolk.
  6. After some time turn it to the other side and make sure both the sides of the eggs are cooked.
  7. Garnish with chopped cilantro and serve with plain rice or chapatti.
