Ingredients:

• 1 cup – Ridge gourd peels
• 2 tbsp – Sesame seeds
• 2 – Dry Red Chillies
• 5 – Garlic Cloves
• 1 inch piece – Ginger
• 1 – Tamarind (marble size)
• 2 tsp – Oil
• For Tempering:
• 1/4 tsp – Mustard Seeds
• 1/4 tsp – Urad Dal
• 2 – Curry leaves

Method:

  1. Wash thoroughly the ridge gourd peels and drain the excess water.
  2. Heat 1 tsp of oil and fry the ginger, garlic, red chillies and tamarind until they turn brown.
  3. Add the sesame seeds immediately, fry them until they change colour and keep aside.
  4. Stir fry the ridge gourd peels in the same pan until they shrink a bit and let them cool.
  5. Grind them a bit coarsely with enough salt.
  6. Heat the remaining oil in a pan, add the mustard seeds, urad dal and curry leaves, let them splutter and add the tempering to the ground chutney.
