
Ingredients:
• 1/2 kg – Meat
• 1/2 kg – Brinjals
• 2 – onions, chopped finely
• 2 – tomatoes, chopped
• 2 tsp – chilli powder
• 1/2 tsp – Turmeric powder
• 2 tsp – coriander powder
• 2 tsp – ginger-garlic paste
• 1/2 cup – Coconut paste
• 3 tbsp – oil
• Salt to taste.
Method:
- Cut the brinjals into medium size pieces and soak in water.
- Heat oil in a pan or a pressure cooker and fry the onions well.
- Add the ginger garlic paste and saute lightly.
- Add the tomatoes, chilli powder, turmeric powder and coriander powder and fry for some time.
- Add the meat and coconut paste.
- Mix well and continue frying for some time till the oil separates from the mixture.
- Add salt and 2 or 3 cups of water and cook till the meat is tender.
- Add the brinjals and mix well.
- Cover and cook till the brinjals are done.
- Serve.
