Ingredients:

• 1 kg – minced Meat
• 2 tbsp – oil
• 2 eggs, beaten
• 1/2 cup – Tomato sauce or thick Tomato puree
• 1/4 cup – Mutton stock
• 1/2 cup – finely chopped Onions
• 1 cup – breadcrumbs
• 8 Cloves garlic, minced
• 2 tbsp – Worcestershire sauce
• 1 tsp – chilli powder
• Salt and pepper to taste
• For garnishing: whole Tomatoes and Parsley leaves

Method:

  1. Fry the minced meat in 2 tbsp oil until the water dries up. Take off the fire.
  2. Add the 2 beaten eggs, tomato sauce (or tomato puree), mutton stock, finely chopped onions, breadcrumbs, garlic cloves, minced parsley, Worcestershire sauce, chilli powder, salt and pepper to taste. Mix well.
  3. If the mixture looks dry, add 2 tbsp of extra tomato sauce.
  4. Grease a 8 x 5 x 3 inch loaf tin. Put half the meat into it.
  5. Place 4 hard boiled eggs, sideways on it.
  6. Cover with the remaining meat. Press down lightly.
  7. Bake for approximately 40 mins at 180 deg C.
  8. Cool for 5 mins and then turn out.
  9. Decorate with skinned whole tomatoes and parsley.
  10. Serve hot or cold with additional tomato sauce.
