Ingredients:

• 4 cups – Chicken stock
• 1/2 kg – carrots, sliced
• 2 tbsp – oil
• 1/2 tsp – Garam Masala
• 1 tsp – cumin powder
• 1/2 tsp – curry powder
• 1 – onion, chopped finely
• 1/2 tsp – garlic, crushed
• 1 cup – Milk
• 1 cup – paneer, grated
• 1/2 tsp – chilli sauce
• 2 stalks – celery, sliced
• Salt to taste

Method:

  1. Heat oil in a saucepan. Saute onion till transparent.
  2. Add curry powder and garam masala.
  3. Simmer for a minute.
  4. Add all ingredients except milk and paneer.
  5. Simmer for 30 minutes. Let it cool.
  6. Blend the soup with milk and paneer.
  7. Serve hot with croutons.
